Peel and slice a cucumber finely and layer with about 4 sliced strawberries per person. Dress lightly with a drizzle of mild olive oil, white balsamic vinegar, cracked black pepper and some mint leaves. This salad is delicious with grilled fish or chicken or as a light starter.
