Marinated Pork Chops

We took delivery of 2 very cute Sandy and Black piglets this week and, of course, that got us thinking about Pork!

This recipe is a new invention but it worked so well that we had to share it with you.

Marinate the Pork Chops overnight in a fridge, if you can, but a few hours will do if you can’t manage that.

Pork Marinade Ingredients

  • 2 big sprigs of Rosemary, finely chopped.
  • 2 cloves of garlic, peeled and smashed.
  • 2 tbsp Dijon mustard.
  • 2 tbsp balsamic vinegar.
  • 4 tbsp olive oil.
  • A generous grind of black pepper.

To make the marinate, simply mix all of these ingredients together and pop in the pork chops (1 per person).

To cook the Pork, remove it from the marinade and pop it straight onto a very hot griddle, barbecue or hot pan.

Once cooked, serve the Pork with saute potatoes and green beans.
