Melt 20g of butter over a low heat. Add the diced pumpkin to the pan, cover and cook until tender. Push through a fine mesh sieve. Meanwhile melt 75g of butter with the brown sugar and honey. Cook a chopped medium onion, 2 crushed cloves of garlic and the red curry paste in 2 tbsp vegetable oil until softened. Add a medium diced potato and 500 g chopped pumpkin, cover with the stock and cook until tender. Remove from the heat, add the fish sauce and coconut milk and liquidise. As it was a beautiful, crisp night we decided to do some bat detection. With book and bat detector in hand we set about searching under the trees on the avenue  and around the pond. It took some time to attune our ears to the chips, ticks, plops and smacks which we could hear as the bats hunted for food high above us. New M9 Motorway Open

09.09 2010 New M9 Motorway Open

The final stretch of the M9 motorway has finally opened! That means that it is now dual carriageway or motorway all the way from the M50 in Dublin to just 2 miles from Croan Cottages. I did the drive myself today and it took 1 hour and 33 minutes from Leeson St. to Croan (just 1 hour and 10 minutes from the M50). Now a break at Croan Cottages is even closer for all those travelling...
